Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh herbs (thyme or parsley)
  • Black pepper to taste

Instructions

  1. Wash and quarter the Yukon Gold potatoes.
  2. Boil in salted water until fork-tender (15-20 minutes).
  3. Drain and let them dry for a few minutes.
  4. On a lined baking sheet, gently smash each potato to about half an inch thick.
