- 2 fresh jalapeños
- 1 cup sharp cheddar cheese, shredded
- 4 oz cream cheese, softened
- 2 slices sourdough bread
- 2 tbsp unsalted butter
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Halve the jalapeños lengthwise, remove seeds (for less heat), and place cut-side up on the sheet.
- Drizzle with olive oil, sprinkle with salt and pepper, then roast for 15-20 minutes until tender and charred.
- In a bowl, combine softened cream cheese, shredded cheddar, and garlic powder until smooth.
- Chop the roasted jalapeños and mix them into the cheese mixture.
- Butter one side of each bread slice. Spread half of the cheese mixture on one slice, top with another slice butter-side up.
- Heat a skillet over medium heat and grill the sandwich for 3-4 minutes per side until golden brown.
- Let it rest for a minute before slicing in half.
