- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh blackberries
- 2 tbsp gelatin powder
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until moistened. Press into the bottom of a springform pan.
- Bake the crust for about 10 minutes until golden. Allow it to cool completely.
- In a large bowl, beat cream cheese until smooth. Gradually add powdered sugar, then mix in sour cream and vanilla extract.
- Dissolve gelatin in warm water per package instructions and stir into the cream cheese mixture.
- Gently fold in blackberries and pour over the cooled crust.
- Cover and refrigerate for at least 4 hours or overnight to set before serving.
