Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh blackberries
  • 2 tbsp gelatin powder

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until moistened. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden. Allow it to cool completely.
  3. In a large bowl, beat cream cheese until smooth. Gradually add powdered sugar, then mix in sour cream and vanilla extract.
  4. Dissolve gelatin in warm water per package instructions and stir into the cream cheese mixture.
  5. Gently fold in blackberries and pour over the cooled crust.
  6. Cover and refrigerate for at least 4 hours or overnight to set before serving.
