Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Mini cupcake liners

Instructions

  1. Prepare your workspace by lining a muffin tin with mini cupcake liners.
  2. Melt half of the chocolate chips in a microwave-safe bowl in 30-second intervals until smooth, stirring in between.
  3. Spoon melted chocolate into each liner to cover the bottom and sides. Chill in the refrigerator for 10-15 minutes until set.
  4. In a separate bowl, mix together peanut butter, powdered sugar, and vanilla extract until smooth.
  5. Remove the muffin tin from the fridge and fill each chocolate shell with about one teaspoon of peanut butter mixture.
  6. Melt the remaining chocolate chips and spoon over the peanut butter filling to cover completely.
  7. Chill for an additional 30 minutes until fully set.
