Ingredients

  • All-Purpose Flour
  • Granulated Sugar
  • Brown Sugar
  • Unsalted Butter
  • Peanut Butter
  • Baking Soda
  • Vanilla Extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together granulated sugar, brown sugar, unsalted butter, and peanut butter until fluffy (about 3-4 minutes).
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour and baking soda. Gradually mix into wet ingredients until just combined.
  5. Scoop rounded balls of dough onto prepared sheets, flatten slightly with a fork.
  6. Bake for 10-12 minutes until edges are golden and centers are slightly soft. Cool on trays before transferring to wire racks.
  7. For the filling, mix additional peanut butter with powdered sugar until smooth. Spread onto half of the cooled cookies and top with the other half.
