Ingredients

  • Chocolate cookie crust
  • Peppermint extract
  • Heavy whipping cream
  • Green food coloring
  • Sugar
  • Gelatin powder

Instructions

  1. Preheat the oven to 350°F (175°C). For a homemade crust, mix crushed chocolate cookies with melted butter, press into a pie dish, and bake for 10 minutes.
  2. In a saucepan over low heat, dissolve sugar and gelatin powder in water, stirring continuously until smooth, then remove from heat.
  3. Whip heavy cream in a separate bowl until soft peaks form. Gently fold in peppermint extract and green food coloring into the gelatin mixture.
  4. Carefully fold the whipped cream into the gelatin mixture until fully combined.
  5. Pour the filling into the cooled chocolate crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or overnight.
  6. Serve chilled by slicing into pieces to share.
