  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh bell peppers, sliced (mixed colors)
  • 1 cup sweet onions, sliced
  • 8 slices provolone cheese
  • 4 hoagie rolls
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Prep your ingredients by slicing the bell peppers and onions into thin strips.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onions and peppers for about 5-7 minutes until golden brown.
  3. Season the chicken breasts with salt, pepper, and garlic powder. Push the veggies aside in the skillet and add the chicken. Cook for about 6-7 minutes per side until golden brown and fully cooked.
  4. Lower heat slightly and place provolone cheese slices over the chicken. Cover with a lid for about 2-3 minutes to melt the cheese.
  5. Slice hoagie rolls open without cutting through entirely. Layer sautéed peppers and onions on each roll, followed by sliced chicken topped with melted cheese.
  6. Serve immediately while hot! Customize with condiments as desired.
