- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh bell peppers, sliced (mixed colors)
- 1 cup sweet onions, sliced
- 8 slices provolone cheese
- 4 hoagie rolls
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
Instructions
- Prep your ingredients by slicing the bell peppers and onions into thin strips.
- Heat olive oil in a large skillet over medium heat. Sauté the onions and peppers for about 5-7 minutes until golden brown.
- Season the chicken breasts with salt, pepper, and garlic powder. Push the veggies aside in the skillet and add the chicken. Cook for about 6-7 minutes per side until golden brown and fully cooked.
- Lower heat slightly and place provolone cheese slices over the chicken. Cover with a lid for about 2-3 minutes to melt the cheese.
- Slice hoagie rolls open without cutting through entirely. Layer sautéed peppers and onions on each roll, followed by sliced chicken topped with melted cheese.
