- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 cup heavy cream
- 4 soft sub rolls
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground chicken, breadcrumbs, garlic powder, parsley, and Parmesan. Form into 2-inch meatballs.
- Bake meatballs on a parchment-lined baking sheet for 20 minutes until golden brown.
- In a saucepan over medium heat, melt butter and whisk in heavy cream and garlic powder. Cook until slightly thickened.
- Stir in Parmesan cheese until melted. Adjust seasoning as needed.
- Slice open each sub roll and fill with baked meatballs. Drizzle with Alfredo sauce and top with mozzarella.
- Bake assembled subs for an additional 10 minutes until cheese is melted.
