Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 cup heavy cream
  • 4 soft sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, garlic powder, parsley, and Parmesan. Form into 2-inch meatballs.
  3. Bake meatballs on a parchment-lined baking sheet for 20 minutes until golden brown.
  4. In a saucepan over medium heat, melt butter and whisk in heavy cream and garlic powder. Cook until slightly thickened.
  5. Stir in Parmesan cheese until melted. Adjust seasoning as needed.
  6. Slice open each sub roll and fill with baked meatballs. Drizzle with Alfredo sauce and top with mozzarella.
