Description

Beef enchiladas are a comforting and flavorful dish that bring a taste of Mexico to your table. With layers of tender ground beef, gooey melted cheese, and soft corn tortillas, these enchiladas are perfect for family dinners or gatherings. Topped with fresh cilantro and a dollop of sour cream, each bite is a fiesta of flavor that will leave everyone asking for more.

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • 1 cup sour cream
  • ½ cup chopped fresh cilantro
  • Sliced jalapeños (to taste)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef. Add chopped onions and sauté until translucent.
  3. Stir in cumin, chili powder, and half of the enchilada sauce. Simmer for about 5 minutes.
  4. Spoon the beef mixture onto each tortilla, sprinkle with cheese, and roll tightly.
  5. Place the rolled tortillas seam-side down in a greased baking dish. Pour remaining enchilada sauce over them and top with more cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  7. Serve hot with sour cream, cilantro, and jalapeños.
