  • 1 cup powdered sugar, sifted
  • ½ cup pineapple juice (preferably 100% juice)
  • 1 cup full-fat coconut cream
  • 2 cups Cool Whip (or homemade whipped cream)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter until well combined. Press firmly into the bottom of an 8×8-inch baking dish to form the crust.
  2. In a bowl, beat softened cream cheese and powdered sugar until smooth. Gradually add pineapple juice while mixing until fully incorporated.
  3. Fold in coconut cream gently until the mixture is creamy and well combined.
  4. Spread half of the cream cheese mixture over the crust, followed by half of the Cool Whip. Repeat layering with remaining mixtures.
