Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) chickpeas
  • 1 red bell pepper
  • 1 cucumber
  • Fresh parsley
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Cumin
  • Paprika
  • Salt
  • Pepper
  • Red pepper flakes (optional)

Instructions

  1. Rinse quinoa under cold water until clear. Combine with 2 cups of water or broth in a saucepan and bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Let sit covered for an additional 5 minutes.
  3. While quinoa cools, chop red bell pepper, cucumber, and parsley into bite-sized pieces.
  4. In a small bowl, whisk together olive oil, lemon juice, and seasonings.
  5. Fluff the cooked quinoa in a large mixing bowl. Add chickpeas and chopped veggies. Pour dressing over the salad and mix gently.
  6. Taste and adjust seasoning if needed. Serve chilled or at room temperature.
