  • 4 large flour tortillas (whole wheat optional)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup sliced bell peppers (any color)
  • 1 medium onion (sliced)
  • 2 cups fresh spinach
  • Olive oil for sautéing

Instructions

  1. Wash and slice the bell peppers and onion into thin strips; rinse the spinach.
  2. Heat olive oil in a skillet over medium heat and sauté onions until translucent. Add bell peppers and cook for 5 minutes, then stir in spinach until wilted.
  3. Place one tortilla in another skillet over medium heat; sprinkle half the cheese on one side. Layer sautéed vegetables on top.
