- 1.5 lbs baby potatoes
- 4 cloves garlic
- 1/2 cup unsalted butter
- 1 cup low-sodium beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Trim excess fat from the chuck roast and cut into bite-sized pieces. Season with salt and pepper.
- In a skillet over medium heat, melt butter. Sauté minced garlic until fragrant (about 30 seconds).
- Place seasoned beef and sautéed garlic in the slow cooker, then add baby potatoes on top.
- Pour in beef broth and sprinkle with dried thyme. Stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until tender. Serve hot.
