Ingredients

  • 2 lbs beef chuck roast
  • 1.5 lbs baby potatoes
  • 4 cloves garlic
  • 1/2 cup unsalted butter
  • 1 cup low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and cut into bite-sized pieces. Season with salt and pepper.
  2. In a skillet over medium heat, melt butter. Sauté minced garlic until fragrant (about 30 seconds).
  3. Place seasoned beef and sautéed garlic in the slow cooker, then add baby potatoes on top.
  4. Pour in beef broth and sprinkle with dried thyme. Stir gently to combine.
