  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 1 cup bell peppers, diced (red or green)
  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes (with juice)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Sauté onion and bell peppers in olive oil using the sauté function on the Instant Pot for about five minutes. Stir in minced garlic.
  2. Add ground beef and cook until browned (approximately seven minutes), breaking it apart as it cooks.
  3. Sprinkle in chili powder, cumin, salt, and pepper; stir well and cook for one minute.
  4. Incorporate rinsed beans, diced tomatoes, and one cup of broth; mix thoroughly.
  5. Seal the lid and set to manual high pressure for 15 minutes; allow natural pressure release for ten minutes before venting remaining pressure.
  6. Give your chili a good stir before serving hot with desired toppings.
