  • 23 pounds chuck roast
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 2 large potatoes, diced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • Dried thyme and bay leaves

Instructions

  1. Select the sauté function on your Instant Pot. Heat a tablespoon of olive oil and sauté chopped onions and minced garlic until translucent (about 3 minutes).
  2. Add cubed chuck roast, season with salt and pepper, and brown on all sides for about 5 minutes.
  3. Stir in carrots, potatoes, beef broth, tomato paste, thyme, and bay leaves until well combined.
  4. Seal the lid and set to high pressure for 35 minutes. Allow natural release for 10 minutes before manually releasing any remaining pressure.
  5. For a thicker stew, mix cornstarch with water and stir into the stew before serving.
  6. Serve hot, garnished with fresh parsley if desired.
