- 3–4 boneless, skinless chicken breasts
- 1 cup bell peppers (red, yellow, or green)
- 1 cup pineapple chunks
- 1 medium onion
- 2 cloves garlic
- ¼ cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
Instructions
- Cut chicken into bite-sized pieces and chop bell peppers and onion.
- Heat vegetable oil in a skillet over medium-high heat. Sauté chicken until golden brown, about 5-7 minutes.
- Add minced garlic and onion; cook until fragrant (about 1 minute). Stir in bell peppers and pineapple chunks.
- In a bowl, mix soy sauce, vinegar, sugar, cornstarch, and water; whisk until smooth.
- Pour the sauce over the chicken mixture in the skillet. Stir frequently until the sauce thickens (about 3-5 minutes).
- Serve with steamed rice or noodles.
