- 3–4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup low-sodium chicken broth
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Trim excess fat from chicken breasts and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat until shimmering. Add minced garlic and sauté for about 30 seconds until fragrant.
- Place the seasoned chicken in the skillet, cooking for 6-7 minutes on each side until golden brown and cooked through.
- Push the chicken to one side of the skillet; add fresh spinach to the other side. Sauté for 2-3 minutes until wilted.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the pan. Let simmer for an additional minute.
- Serve warm, optionally garnished with Parmesan cheese or a sprinkle of red pepper flakes.
