Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from chicken breasts and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Place the seasoned chicken in the skillet, cooking for 6-7 minutes on each side until golden brown and cooked through.
  4. Push the chicken to one side of the skillet; add fresh spinach to the other side. Sauté for 2-3 minutes until wilted.
  5. Pour in chicken broth and lemon juice, scraping up any browned bits from the pan. Let simmer for an additional minute.
  6. Serve warm, optionally garnished with Parmesan cheese or a sprinkle of red pepper flakes.
