Description

Blueberry Oatmeal Muffins are a wholesome treat, combining juicy blueberries with hearty oats. Perfect for breakfast or a snack, they’re easy to make and irresistibly delicious.

Ingredients

  • Rolled oats
  • All-purpose flour
  • Baking powder
  • Sugar (or honey/maple syrup)
  • Milk (dairy or plant-based)
  • Eggs (or flax eggs)
  • Fresh blueberries
  • Cinnamon
  • Vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, whisk together rolled oats, flour, baking powder, sugar, cinnamon, and a pinch of salt.
  3. In another bowl, combine milk, eggs, vanilla extract, and melted butter until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Carefully fold in fresh blueberries to keep them intact.
  6. Spoon the batter into muffin cups about ¾ full and bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
