Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup fresh blackberries
  • 2 teaspoons vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Allow it to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
  4. Beat in eggs one at a time, avoiding overmixing. Gently fold in blackberries.
  5. Pour the filling into the cooled crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Allow cooling in the oven with the door cracked to prevent cracks, then refrigerate for at least four hours before serving.
