Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
- Bake the crust for about 10 minutes until golden brown. Allow it to cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
- Beat in eggs one at a time, avoiding overmixing. Gently fold in blackberries.
- Pour the filling into the cooled crust and bake for 50-60 minutes until set but slightly jiggly in the center.
- Allow cooling in the oven with the door cracked to prevent cracks, then refrigerate for at least four hours before serving.
