Ingredients

  • Large flour tortillas
  • Fresh eggs
  • Bacon or sausage
  • Shredded cheddar cheese
  • Bell peppers and onions
  • Avocado slices
  • Salsa or hot sauce
  • Fresh cilantro (optional)

Instructions

  1. Cook chopped bacon or sausage in a skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, sauté diced bell peppers and onions until softened, about 5 minutes.
  3. Whisk together eggs with salt and pepper, then add to the skillet, stirring until just cooked and fluffy.
  4. Lay out tortillas and fill each with scrambled eggs, meat, veggies, cheese, avocado, and salsa.
  5. Wrap tightly by folding in the sides and rolling from one end to the other.
  6. For extra crispiness, toast burritos seam-side down in a hot skillet for 2-3 minutes per side.
