Description

Experience the vibrant flavors of Moroccan Chicken Tagine with Apricots—a fragrant blend of tender chicken, sweet apricots, and aromatic spices that will transport your taste buds to North Africa.

Ingredients

  • Bone-in chicken thighs
  • Yellow onion
  • Garlic
  • Ground cinnamon
  • Cumin
  • Fresh ginger
  • Dried apricots
  • Low-sodium chicken broth
  • Extra virgin olive oil
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Gather and prepare ingredients by chopping the onions and mincing the garlic.
  2. Heat olive oil in a tagine or large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic until fragrant.
  3. Increase heat and sear chicken thighs skin-side down until golden brown (4-5 minutes each side).
  4. Sprinkle cinnamon, cumin, and ginger over the chicken; add dried apricots and stir well to combine.
  5. Pour in chicken broth just enough to cover half of the chicken pieces. Bring to a simmer, cover tightly, and reduce heat to low for 30-40 minutes until tender.
  6. Garnish with chopped cilantro or parsley before serving over couscous or rice.
