Instructions
- Preheat the oven to 325°F (160°C). Grease a springform pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan. Bake for 10 minutes until lightly golden, then cool.
- Beat cream cheese until smooth; gradually add sugar until lump-free. Mix in eggs one at a time, followed by sour cream and vanilla.
- Blend fresh strawberries with sugar for puree; layer cheesecake mixture and strawberry puree in the crust, creating swirls with a knife.
- Bake for 55-60 minutes until edges are set but center is slightly jiggly. Cool in the oven with door cracked for about an hour before refrigerating.
