Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz full-fat cream cheese, softened
  • 1 cup full-fat sour cream
  • 1 cup fresh strawberries, pureed
  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a springform pan.
  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan. Bake for 10 minutes until lightly golden, then cool.
  3. Beat cream cheese until smooth; gradually add sugar until lump-free. Mix in eggs one at a time, followed by sour cream and vanilla.
  4. Blend fresh strawberries with sugar for puree; layer cheesecake mixture and strawberry puree in the crust, creating swirls with a knife.
  5. Bake for 55-60 minutes until edges are set but center is slightly jiggly. Cool in the oven with door cracked for about an hour before refrigerating.
