  • 1 (14 oz) can San Marzano tomatoes
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 1 tsp dried oregano
  • 1 tsp fresh basil (or ½ tsp dried)
  • Salt and pepper to taste
  • ½ cup dry red wine (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion and sauté until translucent.
  2. Stir in minced garlic, carrot, and celery; cook until softened (about 5 minutes).
  3. Add crumbled tempeh to the skillet; cook until golden brown.
  4. Pour in canned tomatoes and optional red wine; simmer on low for about 20 minutes.
