Ingredients

  • 2 medium sweet potatoes, diced
  • 1 bell pepper (any color), chopped
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Peel and dice the sweet potatoes into small cubes. Chop the bell pepper and onion.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and garlic until fragrant (about 2 minutes).
  3. Add sweet potato cubes along with salt and pepper. Cook until tender (8-10 minutes), stirring occasionally.
  4. Mix in bell peppers, cumin, and paprika. Sauté for another 5 minutes until everything is nicely combined.
