  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white or brown)
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • spices: paprika, oregano, salt & pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, sauté onions until translucent. Add garlic and cook for an additional minute.
  4. Add ground beef to the skillet; cook until browned and crumbled.
  5. In a bowl, mix the cooked rice, tomato sauce, sautéed mixture, and spices until well combined.
  6. Stuff each bell pepper with the beef mixture.
  7. Place stuffed peppers in a baking dish covered with foil and bake for 25–30 minutes. Remove foil and bake for an additional 10 minutes until golden.
