Ingredients

  • 1 large yellow onion
  • 4 cloves garlic
  • 2 cups low-sodium beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • Taco shells (soft corn tortillas or crispy)
  • Fresh toppings (cilantro, tomatoes, sour cream, avocado)

Instructions

  1. Trim excess fat from the chuck roast and season with chili powder and cumin.
  2. In a pot over medium-high heat, sear the meat until browned on all sides.
  3. Add chopped onions and minced garlic; cook until fragrant.
  4. Pour in beef broth, scraping up any brown bits from the bottom.
  5. Cover and slow cook on low for 6-8 hours until meat shreds easily.
