  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped green onions
  • 1 cup pico de gallo or salsa

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the sweet potatoes under running water and pat dry.
