Ingredients

  • 1 cup green or brown lentils
  • 1 medium yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin seeds
  • Juice of 1 lemon
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until onions are translucent.
  2. Stir in garlic and cumin seeds; toast for about 30 seconds.
  3. Pour in vegetable broth, season with salt and pepper, and bring to a boil.
  4. Add rinsed lentils; reduce heat, cover partially, and simmer for 25-30 minutes until tender.
  5. Stir in fresh lemon juice and adjust seasoning as needed.
  6. Serve warm, garnished with herbs or a drizzle of olive oil if desired.
