- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 2 bay leaves
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 cups spinach or kale (optional)
Instructions
- Chop the onion, carrots, and celery into small, uniform pieces.
- In a large pot over medium heat, add olive oil and sauté the onions until translucent (about 5 minutes). Stir in garlic.
- Add carrots and celery; cook until softened.
- Stir in lentils, diced tomatoes, spices, and vegetable broth. Bring to a boil before reducing heat.
- Simmer for 30-40 minutes until lentils are tender but intact. Stir occasionally.
- If using greens, add them during the last few minutes of cooking until wilted. Serve hot.
