  • 1 cup cooked quinoa
  • 1 cup whole wheat breadcrumbs
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ cup fresh cilantro or parsley, chopped
  • 6 whole grain burger buns

Instructions

  1. Prepare your quinoa by combining 1 cup rinsed quinoa with 2 cups water in a medium pot. Bring to a boil, then simmer uncovered until the water is absorbed (about 15 minutes).
  2. Sauté onions and garlic in a skillet over medium heat until translucent (about 5 minutes).
  3. In a large bowl, mix cooked quinoa, lightly mashed black beans, sautéed veggies, breadcrumbs, spices, and herbs until well combined.
  4. Form the mixture into patties about ½ inch thick; yield should be around six burgers.
  5. Heat oil in the skillet over medium-high heat and cook patties for about five minutes per side until golden brown.
  6. Assemble burgers on toasted buns with desired toppings like lettuce, tomato slices, or avocado.
