Ingredients

  • 34 boneless skinless chicken breasts
  • Corn or flour tortillas
  • Enchilada sauce (store-bought or homemade)
  • Shredded cheddar and Monterey Jack cheese
  • Rinsed black beans
  • Chopped green onions
  • Fresh cilantro (optional)
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season chicken breasts with salt and pepper. Cook in a skillet over medium heat until golden brown; shred once cooled.
  3. In a baking dish, layer enchilada sauce, half the tortillas, shredded chicken, black beans, more sauce, and half the cheese. Repeat layers.
  4. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until bubbly and golden brown.
  5. Serve hot topped with cilantro, green onions, and sour cream.
