- Dried Chickpeas

Instructions
- Soak dried chickpeas overnight in water. Drain and combine in a food processor with parsley, garlic, cumin, coriander, salt, and pepper. Pulse until finely chopped.
- Form small balls from the mixture using wet hands.
- Heat olive oil in a skillet over medium-high heat. Fry falafels until golden brown on each side (3-4 minutes).
- For the garlic tahini sauce, whisk together tahini, lemon juice, minced garlic, salt, and water until smooth.
- Spread sauce inside pita bread; fill with falafels and top with sliced tomatoes and cucumbers. Drizzle extra sauce before wrapping tightly.
