- 2–3 boneless, skinless chicken thighs
- 4 cups chicken broth

Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent; add carrots and celery; cook for 5 minutes.
- Add chicken thighs and broth; season with salt and pepper. Bring to a simmer, cover, and cook for 20 minutes until chicken is cooked.
- Remove chicken from pot, shred it, then return to the pot.
- Mix flour, baking powder, salt, milk, and melted butter in a bowl to form dumpling dough.
- Drop spoonfuls of dough into simmering broth; cover and cook for 10 minutes without lifting the lid.
- Check dumplings are fluffy; serve hot.
