Ingredients

  • 23 boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • ½ cup butter, melted

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions until translucent; add carrots and celery; cook for 5 minutes.
  2. Add chicken thighs and broth; season with salt and pepper. Bring to a simmer, cover, and cook for 20 minutes until chicken is cooked.
  3. Remove chicken from pot, shred it, then return to the pot.
  4. Mix flour, baking powder, salt, milk, and melted butter in a bowl to form dumpling dough.
  5. Drop spoonfuls of dough into simmering broth; cover and cook for 10 minutes without lifting the lid.
  6. Check dumplings are fluffy; serve hot.
