Ingredients

  • Savoiardi (Ladyfingers)
  • Freshly brewed espresso
  • Mascarpone cheese
  • Granulated sugar
  • Cocoa powder
  • Fresh eggs
  • Vanilla extract

Instructions

  1. Brew 1 cup of espresso and let it cool.
  2. In a medium bowl, whisk egg yolks and sugar until pale. Add mascarpone and vanilla; mix until smooth.
  3. Whip egg whites until stiff peaks form, then fold into the mascarpone mixture gently.
  4. Quickly dip ladyfingers into cooled espresso without soaking them too long.
  5. Layer half of the mascarpone mixture in a dish, followed by soaked ladyfingers, then top with the remaining mascarpone.
