Ingredients

  • 1 cup green or brown lentils, rinsed
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather and chop all vegetables: carrots, celery, onion, and garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onions until translucent (about 5 minutes).
  3. Stir in the chopped carrots and celery along with minced garlic and spices (cumin and thyme). Sauté for an additional 3–4 minutes until tender.
  4. Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for approximately 30–35 minutes until lentils are tender.
  5. Stir in spinach or kale until wilted. Adjust seasoning with salt and pepper before serving.
