- 2 medium carrots, chopped
- 2 stalks celery, chopped

- 6 cups low-sodium vegetable broth

- 1 tsp dried thyme
- 2 cups fresh spinach or kale
- 2 tbsp olive oil

Instructions
- Gather and chop all vegetables: carrots, celery, onion, and garlic.
- In a large pot over medium heat, add olive oil. Once hot, sauté the onions until translucent (about 5 minutes).
- Stir in the chopped carrots and celery along with minced garlic and spices (cumin and thyme). Sauté for an additional 3–4 minutes until tender.
- Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for approximately 30–35 minutes until lentils are tender.
- Stir in spinach or kale until wilted. Adjust seasoning with salt and pepper before serving.
