Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • 2 bay leaves
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic.
  2. Add chopped carrots and celery; cook for another 3-4 minutes until slightly softened.
  3. Stir in rinsed lentils and bay leaves.
  4. Pour in the vegetable broth to cover all ingredients. Bring to a rapid boil, then reduce heat to simmer.
  5. Season with salt and pepper to taste. Simmer for 25-30 minutes until lentils are tender but not mushy.
  6. Remove bay leaves before serving. Adjust seasoning if necessary and enjoy!
