  • 500g boneless chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 3 teaspoons garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt to taste
  • 3 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (400g) diced tomatoes
  • 1 cup coconut milk or heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by mixing yogurt, lemon juice, garam masala, cumin, paprika, and salt in a bowl. Add chicken pieces and coat well. Cover and refrigerate for at least one hour.
  2. Heat vegetable oil in a skillet over medium heat. Add chopped onions and sauté until golden brown. Stir in minced garlic and grated ginger.
  3. Add the marinated chicken to the skillet and cook until browned on all sides.
  4. Pour in diced tomatoes and let it simmer for about ten minutes.
  5. Stir in coconut milk or heavy cream and simmer for an additional five minutes.
  6. Garnish with fresh cilantro and serve with basmati rice or naan.
